Cold Soil is a Sauvignon Blanc from Tres Esquinas, south of San Carlos, in one of the lowest areas of the Uco Valley. From cold soils, a fresh, austere white, with citrus and herbal notes, with a sharp acidity characteristic of the variety.
"For this Stone Soil, shallow soils of sand and stones bathed in lime are selected from the San Carlos area, in the Uco Valley. The pressing of the clusters is done directly, without destemming. It does not have malolactic fermentation or aging in barrels. It is a dense white, with aromas and flavors that range from flowers to honey, and firm acidity, which is responsible for refreshing. An ideal one for hedgehogs." Patricio Tapia - Descorchados Guide
