Saltallary is the expression of Michelini (Passionate Wine) and Dávalos (Bodega Tacuil), in a blend from Gualtallary, Valle de Uco and Molinos, Salta. "Saltallary Sauvignon Blanc 2017 is a 50/50 blend that is completely different in 2017. When I put my nose in the glass, I almost fell off my chair as it had a completely different nose. They bottled it afterwards, and the Salta part it had developed a somewhat oxidative flower and nose, and the part of Gualtallary (which is actually Agua de Roca, which they thought was from Gualtallary, but is from São Paulo) was pure acidity, and the mixture is something completely different. and nuts, curries and herbs, and has a vibrant palate with sharp flavors that made me think of a Jura wine, with a chalky texture and very savory flavors and an almost salty finish. Only 2,600 bottles produced. "An oenological communication between Matías Michelini and the Dávalos family produce this wine that is 50% sauvignon blanc from the Gualtallary vineyards, in the Uco Valley, and another 50% from the Tacuil vineyards at an altitude of 2,500 meters, in the Calchaquíes Valleys. The meeting of two worlds: the tension and freshness of Uco against the exuberance and body of the whites of northern Argentina.
