Polígonos is a selection of varietals that are shown faithfully, according to the town they come from. The Town gives its name to the vineyards. There is a rich and deep expression of the place, through its geography, climate, social, historical and economic aspects.
The San Pablo Geographical Indication is located in the north of the Uco Valley, south of Gualtallary. The combination of the altitude, which rises up to 1,700 meters above sea level, together with the proximity to the mountainous front of the Cordillera Frontal, give it unique microclimatic conditions such as low average temperatures and wide thermal amplitude. These factors strongly condition the maturity cycle of the vine; making this an area of later maturity than other nearby regions.
